Ingredients: 1 cup dry pasta (small to medium shaped pasta works best) 1/3 cup carrots, peeled and finely chopped 1/3 cup broccoli, finely chopped 1/3 cup chick peas, skins removed and cut in half 1/4 cup plain yogurt 1/2 tbsp apple cider vinegar 1/2 tbsp olive oil 1/2 tsp agave nectar (optional) 1/2 tsp mild curry powder etc
Instructions:
In a medium saucepan, cook pasta according to directions on package. When you have 2 minutes left on the timer, add in the chopped carrots, broccoli and chick peas and let cook for the remaining time.
Drain pasta, carrots, broccoli and chick peas and let cool slightly.
